It is simple. You go through your produce drawers in your fridge, pull anything and everything out, cut it up, pour rice vinegar over it, throw in some oregano, basil, kosher salt and pepper and tah-dah! Salad!
This is a good way to get rid of veggies that are on the verge. I usually do tomotoes, onions and cucumbers. But you can do bell peppers, radishes, celery, fresh basil or any other fresh herb, scallions, chives- whatever you want. On this particular day, I had some beautiful heirloom cherry tomatoes. Some were yellow and some were red with green stripes like a watermelon. They were so pretty I almost didn't have the nerve to cut them up and eat them. But I did and they were lovely.

Whit- I am so trying that salad. It makes my mouth water just looking at it. I’ll have to share a couple of my recipes with you. I’m so glad that you mom inspired me to become a blogger. I love keeping up with all of us since we are everywhere now. Jack looks just like Ethan. I’m sure you hear that all the time.
