Chocolate Covered Frozen Bananas with Cashews

Like an idiot, I forgot Jack is allergic to cashews. I gave him one of these for dessert the other night and he didn't do so well. His throat swelled up and his eyes got really puffy and they were itching him like crazy. He was fine, but he talks about his cashew incident all the time now. Duh Whitney. Duh. Too bad, I guess I will have to eat them all by my self. Bummer.



8 oz semi sweet chocolate chips, melted
4 bananas, peeled
Popsicle sticks
Cashews (or any other nuts), chopped

Push a popsicle stick into each banana. With a pastry brush, paint the chocolate on the banana. Roll the banana in the nuts and set on waxed paper. Freeze until hard, about 2 hours, and then put into a plastic ziploc bag. Before eating, let the banana sit out for 15 minutes to soften.

Rookie's notes: For smaller portions, cut the bananas in half. Works better for kids and a quick snack for yourself.
