SueP Waffles

This is from my mom’s cookbook of recipes she used when we were growing up. These waffles are originally called “Matt Waffles”. Who is Matt? I don't know him, so I just call them SueP Waffles.


I prefer to drown my waffles in syrup.
And it is the regular old Mrs. Butterworth's.
I am sure pure maple syrup is great and probably less horrible for you,
but Mrs. Butterworth always takes such good care of me.

2 cups flour
½ cup buttermilk powder
3 tsp baking powder
1 tsp baking soda
3 eggs
2½ cups water

In a large bowl, combine flour, buttermilk powder, baking powder and baking soda. In a separate bowl, combine eggs and water and whisk until well combined.

Add to the flour mixture. Whisk until just mixed. Pour onto hot waffle iron. Serve with syrup and butter.

Rookie’s Notes: To this batch, I added 1 tsp vanilla and the zest of one orange to the batter. It was delightful. I have also added a cinnamon and nutmeg before and that is good too.

Do you take requests? If you do, I am dying for a good gingersnap cookie recipe. Especially if you have one where the cookies are soft and moist (maybe I just don't know how to cook them, but mine usually turn out hard. Am I baking them to long?)

You have basically become my cooking guru, so I hope you don't mind I turn to you for advice!
