Napa Cabbage Citrus Slaw

The world needs less lettuce and more cabbage. Totally underestimated and doesn't have to only be for St. Patty's Day. This salad has crisp napa cabbage, orange segments and yellow bell peppers. It's very fresh tasting and has a nice Asian flavor from the dressing.



1 head napa cabbage, shredded
1 orange, peeled and segmented
1/2 yellow bell pepper, thinly sliced
2 Tbsp rice vinegar
4 Tbsp toasted sesame oil
1 tsp kosher salt
A few grinds black pepper

Combine cabbage, orange segments and bell pepper slices. In a small bowl, whisk together rice vinegar, sesame oil, salt and pepper. Pour dressing over salad. Toss to combine.

Yields 4 servings.
