Brown Sugar and Black Pepper Glazed Carrots

I have this brother in-law. His name is Jason and he married Emily, who is one of those rotten girls who has a baby and looks fantastic a week later. Grrr, girls like that irk me. But she is my sister in-law, so I will always love her.

Did you know that it is possible to tell the difference between colors of peanut butter M&Ms? Well, it is and Jason, Emily and I perfected the art during my Thanksgiving vacation in California. It takes about 10 times to really start to tell the difference. Give it a try. I will give you a hint: the yellows taste like red.

At Thanksgiving, Jason and I put this little ditty together. They were my favorite thing at Thanksgiving besides Melissa's browned butter cauliflower.



10 carrots, peeled and chopped into rounds
1/2 cup butter
Kosher salt
1/2 cup brown sugar
1/4 cup cold water
2 Tbsp corn starch
1 tsp ground pepper
A handful of chopped fresh parsley

In a large skillet over medium high heat, melt butter. Add the carrots and stir to coat the carrots with the butter. Cook for about 10 minutes, stirring occasionally, until carrots are tender.

Meanwhile, combine the cold water and cornstarch and mix well. Set aside.

Once the carrots are tender sprinkle brown sugar over the top and stir until sugar is dissolved. Once the sugar is bubbling, remove the pan from the heat. Stir the cornstarch mixture once more before adding it into the pan. Add cornstarch and ground pepper. Mix quickly and transfer to a serving dish. Sprinkle with fresh parsley. Serve immediately. (This is really important or your carrots will look like complete hell if you try and serve them later. Hell, I tell you, hell.)

This looks really good. While I like my carrots raw my three like 'em cooked. This is a nice side dish to switch up with instead of the usual green veggies or corn! Btw, I'll be sure to serve this ASAP! LOL!
