Mixed Green Salad with Toasted Almonds, Raspberries and Cider Vinaigrette

This is how Jacque rolls.

I have a sister in law that loves to lunch. She invites all the sisters over and she treats us to lunch on her gold-rimmed china with gold flatware. And of course there are linen napkins. The children aren't allowed in. They are in the other room beating up on each other, stealing toys from one another and watching a movie. My poor niece Ariel is in charge of all the little beasts.

Whilst the children quarrel, we women dine on green salad with lemon vinaigrette, buttered and steamed vegetables and ravioli with tomato garlic sauce and fresh basil. Then we sip sparkling cider with cranberries. It is so refreshing to have a lunch like that. Women should do that more often.

So here is a challenge, get together with your girls and host a nice lunch. It doesn't have to be super fancy, but you should serve girl food. This salad is girl food. Your ladies will love it.



For the salad:
1 8 oz bag mixed salad greens
1 cucumber, peeled and thinly sliced
1 Roma tomato, diced
1/2 cup sliced almonds, toasted
1 cup fresh raspberries

Toss all salad ingredients together in a large salad bowl. Pour the cider vinaigrette over the top (you might not need all of it) and toss until everything is well-coated.

For the vinaigrette:
1/2 cup extra-virgin olive oil
1/4 cup cider vinegar
4 tsp sugar
1 Tbsp brown sugar
1 Tbsp balsamic vinegar
1 tsp Worcestershire sauce
1/2 tsp salt

Whisk all ingredients together until well combined.

Yields 4 servings.
Rookie's Notes: Shred a rotisserie chicken and add it to this salad for some more substance.

I totally do this for the girls in my family and for my girlfriends. I love to have tea parties and I totally serve them like at a real tea house. I love it and they feel special. I will for sure make this salad next time I do that. Thanks for the reminder!

This is girl food and I would LOVE it! My husband always mocks fruit in salads and I say give me more. What a great idea to have a nice lunch with the girls.
