Whole Grain Waffles

These are the waffles I make to keep in the freezer. Makes for a wholesome, easy breakfast. Just pop a frozen waffle into the toaster and add a piece of fruit to your plate and you have a well-rounded breakfast.



1 cup wheat flour
1/2 cup oat flour
2 Tbsp ground flax seed
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 eggs, beaten
1 1/2 cup buttermilk
2 Tbsp vegetable oil
1 tsp pure vanilla extract

Heat waffle iron.

In a large bowl, combine wheat flour, oat flour, flax seed, baking powder, baking soda, salt and cinnamon. Whisk to combine. In a separate bowl, combine beaten eggs, buttermilk, oil and vanilla extract. Whisk to combine.

Add the buttermilk mixture to the flour mixture and fold together with a rubber scraper, being sure to not overmix.

Lightly spray hot waffle iron with non-stick spray. Add about 1/2 cup waffle batter. Cook until crisp on the edges. Serve with pure maple syrup, powdered sugar and butter. Makes about 6 waffles.

Rookie's Notes: If you don't keep oat flour in your pantry, you can make your own. Just add rolled oats (quick cooking or regular) to the bowl of a food processor and give it a whirl. If you don't have a food processor, my condolences. You REALLY should look into getting one. The possibilities are endless. Click here to see the one I have and love.

When freezing the waffles, let them cool before you put them in a plastic bag.

I found your blog via my friend Erica. I LOVE IT! I am so going to make those yummy looking waffles tomorrow. Honestly, when I read the recipe title and it said whole grain, I thought for sure they would just be a mix of mostly AP flour and some little bit of something else-- (not because of your previous recipes, but simply from my experience on other food blogs). I was surprised (ecstatic) when I didn't see AP on the list.
Seriously can't wait to try these!

As for the snow... I got here to sunny Israel and was greeted by a pretty fantastic rain storm. So basically, I never escape odd weather.
