Root Beer Float Popsicles


It's hot outside and that kind of heat calls for popsicles. I think of all the hot days we have had so far this summer and when a popsicle would beyond suffice. Like coming home from the park and my windows are rolled down. Like when I am sitting on the patio under the beating sun while Van crawls around poking at bugs. Like when we are sitting outside waiting for the sound of Ethan's motorcycle to come rumbling up the street. And if I think it's hot now, oh boy am I in for it.

I am sure you are going to be in need of some popsicles in the coming months. So to get your freezer filled, it's Popsicle Week! And no cooking involved at all! Just some freezing. ANYONE can make ALL of them. Here is what I have lined up for this week:

First off are root beer float popsicles. A root beer float is creamy and cool and just the same as a popsicle.



3 cups root beer
5 scoops vanilla ice cream

Pour the root beer into a blender and add the ice cream. Blend until smooth. Pour into popsicle molds or paper cups. Freeze until firm.

So excited for popsicle week. I have a mold and am always looking for fun recipes. Thanks for the intro to summer.

OK..Yummmm! But I would be lucky if it made it to the popcicle tray, I would probably down it as a root beer freeze.
