Peanut Butter Pancakes

Okay, yeah, I know. I have a lot of pancake recipes. But I also have two kids that eat breakfast everyday. What kind of greedy little beasts need breakfast everyday? I tell you, this selfish streak my kids are on is going to catch up with them someday. It's a cold, hard world out there and greed will get them nowhere.

Since the breakfast train can feel a little monotonous, I am always looking for ways to change things up. Peanut butter pancakes do the trick. These are incredibly soft and almost delicate. I think the peanut butter does that to them. Being that they are soft, Van makes an enormous mess with these. I am not sure how he will ever get a wife with the messes he tends to make. He insists on throwing food everywhere and no woman will want a man that throws food all over the place.

These pancakes seem to have a myriad of topping possibilities. Jack only likes maple syrup. I am always trying to get him to put something else on them, but he just won't. His close-mindedness is going to be the death of him. Colleges don't like close-minded people. He probably won't go to college because he can only see the world through maple syrup-colored glasses.



1 1/4 cups flour
3 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup milk
1/3 cup peanut butter
1 egg
3 Tbsp melted butter

Heat a griddle or heavy skillet over medium heat.

In a medium bowl, combine the flour, sugar, baking powder and salt. Whisk to combine. In a large bowl, combine the milk, peanut butter and egg. Whisk until smooth. Combine the flour mixture with the milk mixture and gently stir until just combined. Fold in the melted butter.

Spray non-stick spray on the heated griddle. For each pancake, pour 1/2 cup batter onto griddle. Cook until golden brown, turn when the edges are slightly dry.

Yields 8 pancakes.

okay so i love peanut butter pancakes. i really do.
after jonas was born ryan made them for me to cure those post partum blues. they got me through.

We were JUST talking about Peanut butter pancakes over the weekend! Mike tried to make them once awhile back and they were just mushy weirdness. He's the resident pancake maker so I will pass this along to him.

I read this recipe this morning and have been thinking about these pancakes all day. I guess my plan of a healthy sensible dinner of chicken and a salad is out the window. It's pancakes and bacon for dinner tonight!

I must have a fluffy pancake making deficiency. Mine NEVER come out fluffy. While I don't care for PB your pancakes DO look so nice and fluff, I mean yummy! :)

made these for dinner tonight! SO good. we even added some chocolate chips to half the batch. i felt like i was sinning eating something so sweet for dinner!
the recipe we have is from off the food network's site, yours was definitely better. the perfect mix of peanut butter and pancake.
