Recipes for all of your summer produce


From my inbox...

Reader Jessica: "I have loads of green beans. What can I do besides steam them?"

Reader Lucy: "I need a good recipe for stuffed zucchini. We have so much out of our garden and I need to think of some things to do with it. Any other suggestions?"

Reader Pam: "Corn. Help. I have a ton of it."

Ladies, do not fret. You know me, always out to help a gal. I have come to your rescue with a few recipes ideas as you set out on your summer produce voyage. Let's take advantage of what summer has to give us. Like Julia's quote says above, you don't have to get too crazy with your cooking to make things taste fantastic. Just take some perfect produce and perfect upon it. And here are some ideas for just that...

Corn:

do we need to blanch the green beans first -for the panko coated green beans recipe- i read that post and it doesn't say anything about blanching, so should I assume that the green beans will be fully cooked by the end of the 10-15 min in the oven?

Oh, oh, oh I really want that print! I have been looking for some cool stuff for our kitchen and while I did find some cool vintage vegetable seed packet labels, this print rocks!

@Chick - No need to blanch. These will cook just fine in the oven. If your green beans seem large for their size, increase the time by a few minutes and decrease the oven temperature by 25 degrees.

This is so awesome with all of the beans and squash our CSA has been delivering. Woman can not live on zucchini bread alone (or so I've been told).
