BBQed chicken served with pesto mashed potatoesEthan and I went to the Bellagio Buffet years ago and they had pesto mashed potatoes. Of course, Ethan wanted to go home and try it and of course it was fabulous and eventually it became a staple on his catering menu. For being so good, it is too easy. Make your mashed potatoes like you normally would, but add a few spoonfuls of fresh or jarred pesto. And presto! You have a fancy twist on regular mashed potatoes.

Ok, you had me at mashed potatoes. But pesto mashed potatoes? That sounds so good it's almost obscene.

mmmmmm, i don't do pasta so i have no excuse to eat pesto (but i LOVE it) i just might have to make some of these, they sound delicious!!!!
