Roasted Sesame and Panko-coated Green Beans

Panko? What you don’t know what panko is? That’s okay, I will tell you all about it. It is Japanese bread crumbs and they can be found in the international section of most grocery stores. They are really flaky and crunchy. Very versatile. You can substitute panko for any type of bread crumbs and vice versa. If you don’t have any panko, you can most definitely use regular bread crumbs, just make sure they aren’t seasoned.

This recipe originally called for asparagus, but I didn’t have any. Why not choose another skinny long vegetable? Green beans worked great.



½ cup mayonnaise
2 tsp rice vinegar
2 tsp soy sauce
2 tsp grated fresh ginger
2 cups panko bread crumbs
½ cup sesame seeds
Kosher salt and ground pepper
½ lb fresh green beans (they gotta be fresh)
Toasted sesame oil

Set oven to 450 degrees. Oil a large rimmed baking sheet and set aside.

In a large bowl, whisk together mayo, rice vinegar, soy sauce and ginger. In a pie dish, combine panko bread crumbs, salt and pepper and sesame seeds. Toss green beans in mayo mixture and then dredge in the panko mixture. Transfer to the baking dish. Drizzle with a small amount of toasted sesame oil.

Roast for 10-15 minutes or until panko coating is browned.

I love you! #2) THANK YOU for sharing your Trader Joe's loves...because I just walk through every isle looking for some goodness...there is too much goodness there to leave empty handed but WHAT do I pick? I did buy the Sweet Potato Fries (frozen) the other day and they are DIVINE! But I'll check out those others! Keep the shopping list comin!
