Strawberry Cheesecake Ice Cream


This is my recipe submission for Sugar High Fridays. This event is normally hosted by Domestic Goddess, but this one's being hosted by Food Blogga. The request was for a berry dessert. So since my ice cream maker and I are having a hot and steamy affair these days, I thought it only appropriate I post an ice cream recipe.




1½ cups whole milk
1 1/8 cups sugar
3 cups heavy cream
1½ Tbsp pure vanilla extract
½ cup strawberry jam
1 cup diced strawberries
1 small frozen cheesecake, diced

In a medium bowl, use a hand mixer on low speed to combine the milk and granulated sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream and vanilla. Stir in strawberry jam.

Turn on the ice cream maker and pour the mixture into the freezer bowl, and let mix until thickened (time depending on your machine). In the last 5 minutes, add diced strawberries and diced cheesecake.

Once frozen to desired consistency, transfer ice cream to airtight container and place in freezer for at least 2 hours.

Serve with crushed graham crackers on top.
