Make this so you don't have to make anything else for dinner. It has it all. Protein, veggies, carbohydrates. What more do you need? Maybe a dessert. Add some ice cream on top of this and you are good to go.
1/2 lb wagon wheel pasta
2 Roma tomatoes, seeded and chopped
1/2 red onion, chopped
8 fresh white button mushrooms, sliced
1 green bell pepper, chopped
1 stick pepperoni, casing removed and cut into a small dice
1 lb ball fresh mozzarella, diced
20 leaves fresh basil, thinly sliced
1 tsp garlic salt
1 tsp Italian seasoning blend
1 Tbsp tomato paste
2 Tbsp red wine vinegar
1/3 cup extra-virgin olive oil
A few grinds black pepper
In a large pot of boiling salted water, cook pasta until al dente. Drain, rinse and set aside.
Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl. Whisk garlic salt, Italian seasoning, tomato paste and vinegar together. Stream in extra-virgin olive oil while continuing to whisk dressing. When oil is incorporated, pour dressing over pasta salad, add a few grinds of black pepper to the bowl, then toss salad to coat evenly. Adjust your seasonings and serve.
Yields 8 servings.

Your blog is wonderful! My family loves all sorts of pasta salads so I can't wait to try this one out on them. :) Thanks for sharing it!
Mal, I will make it for you.
Andrea, WELCOME! Thanks for reading.
Heather, just remember that she will not be sleeping like that in a year, probably not even in 6 months. It will end.
Janeen, I have a couple veg meals on the way!
Valerie, glad you like the chowder! We loved it too. Probably one of Ethan's favorite.
Tami, thank you! We too love a pasta salad around here. They get better each day!
