Supreme Pizza Pasta Salad

Make this so you don't have to make anything else for dinner. It has it all. Protein, veggies, carbohydrates. What more do you need? Maybe a dessert. Add some ice cream on top of this and you are good to go.



1/2 lb wagon wheel pasta
2 Roma tomatoes, seeded and chopped
1/2 red onion, chopped
8 fresh white button mushrooms, sliced
1 green bell pepper, chopped
1 stick pepperoni, casing removed and cut into a small dice
1 lb ball fresh mozzarella, diced
20 leaves fresh basil, thinly sliced
1 tsp garlic salt
1 tsp Italian seasoning blend
1 Tbsp tomato paste
2 Tbsp red wine vinegar
1/3 cup extra-virgin olive oil
A few grinds black pepper

In a large pot of boiling salted water, cook pasta until al dente. Drain, rinse and set aside.

Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl. Whisk garlic salt, Italian seasoning, tomato paste and vinegar together. Stream in extra-virgin olive oil while continuing to whisk dressing. When oil is incorporated, pour dressing over pasta salad, add a few grinds of black pepper to the bowl, then toss salad to coat evenly. Adjust your seasonings and serve.

Yields 8 servings.

van is sleeping 8 to 8!?!? wow. last night was OKAY. she woke up at 12, 4, and 6 when I finally brought her in my bed. i REALLY hope she takes after van in a couple of weeks in her own room.

I am going to put it on my menu! Thanks Whit - my family isn't likeing me all that much since i have only been cooking with meat on the weekends. I don't think Chad is going to be able to handle it much longer tell they get use to it. keep bringing on the vegetarian meals

I will be making the red bell corn chowder AGAIN for Book Club! I decided to use a La Brea Baguette along side with a green sald, yum, yum!
