Sweet Pea's Oven Fries

Sweet Pea is my East coast food sister. We both seem to have the same opinions on childhood nutrition and delight in being in the kitchen. She is a treasure trove of nutrition knowledge. Any questions about what is best to feed your kids? Ask her. She knows it all.

Here is her recipe for oven fries. We loved them so much that we had them two nights in a row.



1 large sweet potato
1 large russet potato
2 Tbsp vegetable oil
1 tsp paprika
1/2 tsp garlic
1/2 tsp chili powder
1/4 tsp oregano
1/4 tsp each salt and pepper

Set your oven to 450 degrees.

First, cut a very thin slice off the bottom of the potato so it doesn't roll. Then cut off 1/4" slices and slice into julienned 1/4" slices. Place on a cookie sheet and drizzle with oil and spices. Toss well, making sure to coat evenly. Then spread out evenly and with space between the fries. Bake for 25-30 minutes, turning once at about 20 minutes.

OH MAN, those look delicious!! too bad i don't want to even think about turning on my oven ... i'm gonna have to try these those when the weather cools off a bit!

looking at these reminded me when i was once a cook in my own kitchen, until we moved into a place with no oven! TRANSLATION: the thermometer is useless and there is some problem with the gas.
POINT: I need those brownies.

man, i'm going to make those tonight!!! so were they the main dish? ;) bc i'm trying to resurrect my love for grilled salmon after having a NASTY piece of it at some restaurant over the weekend. and those fries seem like they'd be the perfect side dish.

These were so good. I made them last night (with the salmon!) and my kids gobbled them up. I had to cut them off so they would save some for Jason.

We'll be making them again, for sure! And I'm making the curry chicken with rice tomorrow night.

Thanks for doing all the hard work for us by sharing tasty new recipes. It gets me out of my rut of taco salad and sweet and sour meatballs. :)

i just made these and they were sooo good! i used carrots instead of a sweet potato cause we have a gajillion of them and the outcome was excellent!
