Pumpkin Chocolate Chip Cookies


This is my sister Haley.

She is adorable. Especially when she is loving up my boys. She is so sweet to them and I appreciate that in people.

Haley and I made these cookies and ate WAY TOO MANY. But we had to. The time allotted for pumpkin consumption is short. We only have a few months out of the year to get it all in. So we were only doing what was necessary.

Three ingredients, only three. ANYONE can make these.



1 box spice cake mix
1 15 oz can pumpkin puree
1 bag chocolate chips (milk or semi-sweet, whatever you like)

Preheat the oven to 350 degrees.

Combine the cake mix and the pumpkin. Add the chocolate chips and stir well. Spoon mounds of dough onto a cookie sheet.

Bake for 12 minutes. Remove from cookie sheet and allow to cool. Give one to each person in your family and then hide the rest for yourself.

Really? That's IT?? No eggs? No oil? No sifting or pureeing the pumpkin from scratch? Wow. I could totally make these!

I will definitely try this recipe!! We are huge pumpkin fans. I actually just got a RR recipe for Penne with Pumpkin Cream Sauce. Sounds interesting! I will have to let you know how it is.

How freaking sad am I that I haven't been reading your blogs all along? So very sad!! You are so awesome and I am exteremly jealous! ;-) I am also sad because when I don't want to cook dinner, I can't just go mooch off of my awesome neighbor!! These are super yummy! I made a batch earlier this week and Tyler ate 90% of them. I'm making them again today for the trunk-or-treat. Delish and super easy!

I'm new here. I just made these cookies and they turned out really doughy. I used 1 3/4 cup of pumpkin and cooked them 5 minutes longer than posted and they are still really wet inside. Any suggestions?
