Hi, it's me, Ethan, again. I make this mac and cheese for a lot of events. And everyone always raves. The sauce is easy to burn. So stay with it the whole time. You will never have better mac and cheese. Eat your heart out Paula Deen.
1 lb elbow macaroni, cooked according to the package directions
1/2 cup sour cream
1 pint half and half
1 pint heavy cream
1 lb Velveeta cheese
2 1 lb. bags shredded cheddar cheese
Set oven to 350 degrees.
Spray a 9x13 inch pan with non-stick spray. Add the macaroni. With your hands, mix in the sour cream and 1 lb cheddar cheese. Set aside.
In a medium sauce pan over medium heat, add the half and half, heavy cream and Velveeta. Whisk constantly until Velveeta is melted and mixture is heated through. Pour over the pasta and spread evenly with a rubber scraper. Use enough sauce to barely cover the pasta. You will not use all the sauce.
Spread the cheddar cheese evenly over the top. Bake for 30 minutes, or until the cheese is melted.
Yields 8 servings.

I have been wanting a good homemade mac n' cheese recipe. I think I will make this for this Saturday's BBQ.
my gosh I'm drooling.
and normally I can't stand velveeta (mostly because of the image in my mind of doug standing in front of his fridge slicing large chunks of it off the block and eating it. raw.) he knows I think its gross.....i told him. so what I'm saying is public knowledge.
so I wonder if its too late to take back the mac and cheese I just bought @ costco. probably not. I just heard an employee saying that someone brought back a garden hose that was seven years old.
yeah anyway about that mac and cheese......i will be trying that out next week when some family comes over. I love trying new stuff out on them from here. y'all haven't disappointed me yet. :)
you should get a blog, too.
Ok Ethan, I’m going to try your Mac’ n Cheese for dinner tomorrow night.
Thanks for all the yummy recipes; we have been eating pretty darn good at the Hansen house thanks to the Rookie.
Have fun in Sunny Warm California.
I love this blog Ethan!! Your wife is AWESOME!! Every recipe I have tried has been a MAJOR HIT at my house and I don't think this one will disappoint either...THANKS for sharing! This recipe sounds like a dream come true...melted cheese, pasta, cream, sour cream...one can't go wrong! YUM!!
I think Ethan needs a Man-blog. I am a big fan of anything with cream. I will have to try this out!
This looks YUM! I was wondering if you could do some kind of bread or crumb topping on the top for a crust? What do you think?
YUMMY!!! I remember trying this out when you cooked some up at the parent's house. My pregnant self needs some right now, do you think that you guys could make a quick trip? Sure I could make it myself, but sitting a couch chatting away with Whit while you whipped up a huge batch would be heaven! Okay, okay I'll make it myself! You two are cooking geniuses... lucky me!
Just made this tonight. Very good! Thanks for the recipe.
Thanks Ethan! Mac n' cheese is my kids favorite (because they're normal kids) so I'm excited to try a yummy more adult version!!! gET LOST kRAFT
I made it yesterday and it was a HUGE hit (but I did substitute the heavy cream for half and half, still it was a hit. I think I will have to make more next time since there are NO leftovers. It was supper easy too.
