Sweet Potato Biscuits

These biscuits don't taste like sweet potatoes. The sweet potatoes are there to add moisture. And moist they are. Eat them as you like, but I prefer them cut in half, toasted and slathered in raspberry jam.



2 medium sweet potatoes, peeled and chopped
1/2 cup butter, melted
1 cup milk
4 cups self-rising flour
1/8 tsp baking soda
3 Tbsp sugar

Set oven to 400 degrees.

Put the sweet potatoes in a medium saucepan and fill with water. Set over high heat and boil until the potatoes are tender, about 10 minutes. Remove from heat and drain. In a large bowl, mash the potatoes until smooth, but a few chunks remain.

Add the butter and milk to the potatoes and whisk until combined. Stir in the flour, baking soda and sugar with a rubber scraper. Once the dough has come together and all flour is incorporated, turn dough out on to a floured surface. Knead a few times until the dough is smooth. Shape the dough into a disc about 3/4 inch thick. Cut circles with a biscuit cutter. Place on a lightly greased cookie sheet about 1 inch apart. Bake for 15-18 minutes, or until the tops are lightly browned. Remove and place biscuits on a cooling rack.

Brush with melted butter if desired.

it was SO wonderful to meet YOU! i mean i was beside myself ... THE rookie cookie! :) honestly though, i can't thank you enough for the help you offered last night. you saved me from more running around than was necessary. :) i certainly hope our paths cross again. and i of course can't wait to continue frequenting your blog and finding more deliciousness.

They were SOOO good. Trust me, try this one. They had the greatest texture and flavor.. and you really can have them with whatever you like. Im a big fan.

i was thinking about you yesterday ... we were in the doctor's office waiting for them to give fin shots ... aidan was playing with a little blond boy with a buzz and he kept calling him "jack" and when we would correct him, he would put him finger to his mouth, say "hmmmm" then reply, "nope, jack" (over and over and over ... even tonight when i asked him again) ... it's been AGES since he's seen jack, but he was determined that the boy was your little cutie pie!

Those look so yummy. Like you said, I'm sure the sweet potatoes make it SO moist. And what isn't good with raspberry jam? Answer: nothing.

Absolutely loved this recipe. I tried it this evening with some friends and they delighted over these sweet little biscuits. Even went for seconds and thirds. I'd definitely recommend them. Delish!
