Coconut Ice Cream - Guest Blogger

Ingrid is the food blogger behind 3 B's: Baseball, Baking and Books. She is always baking up beautiful, delicious stuff. And she is hilarious. Ingrid thought it appropriate to e-mail Lindsay of Cafe Johnsonia (the resident ice cream whisperer blogger of Utah) and get an ice cream recipe. I had e-mailed Lindsay for a vanilla ice cream recipe a while ago and I totally screwed it up. But Ingrid is here to claim that even I could make this coconutty, cold concoction. I hope she is right.

Coconut Ice Cream
(even Whitney can make this! Hee, hee, just kidding!)


A few weeks ago when Whitney emailed me asking if I'd be interested in being a guest blogger for her, I responded with a quick yes! After the initial fear of, "Oh, goodness what have I just gotten myself into?" came excitement and the question, "what to make,"?

Thinking back to various posts I've read from her blog a recent one stood out. Whitney had attempted to make homemade vanilla ice cream but wasn't successful. Whitney says "she HATES screwing up on food". Hates it like she does Satan, and that when she does, she doesn't ever want to touch that recipe again. She was thinking of giving up on ice cream! Vanilla ice cream! Well, I couldn't let that happen. If I can make ice cream I know she can!

While this isn't a vanilla ice cream recipe it is a super simple one and a good place to start . It also comes by way of Lindsey, who Whitney refers to as Utah's resident ice cream whisperer. Like Whitney, I emailed Lindsey requesting an ice cream recipe, but for me it was a coconut one. Out of all the ice cream recipes I've made I think this one is my favorite.



Coconut Ice Cream (Philadelphia Style) by Cafe Johnsonia
1 can light coconut milk (I couldn't find a light one so I used regular)
1 can sweetened condensed milk
2 cups half and half or light cream (I used 1 cup heavy cream & 1 cup 2% milk)

Whisk together and chill until cold. Churn in your ice cream maker. Serve soft-serve or transfer to a plastic container and freeze until firm.

I have all these ingredients will try this weekend. I will have to get ice cream maker first, but the way I love coconut might make it worth my while. Great job, Ingrid.

Looks beautiful with all the coconut sticking to the ice cream. I don't usually like coconut, but it's so simple I might give it a try.
