Lava Flow (sans alcohol)

I don’t drink or cook with alcohol. Basically I am a total bore (rhymes with whore). But I do love beverages. Orange juice with breakfast every morning. Diet Coke during afternoon errands. Big glass of water while cooking dinner. Strawberry Limeade from Sonic between 2-4 pm (Happy Hour). And a fun, icy drink for me and Ethan after my boys are in bed. I mostly wait until they are in bed so that I don’t have to share with them. If I made this during the day, Jack would be all over me for a sip, which would turn into a chug. Along with some back wash. Sound familiar?

A lava flow traditionally has the strawberry mix in the bottom of the glass and then the pina colada part is poured on top and then the strawberry kind of comes up the sides of the glass. Looks kind of like lava flowing. You could do that, but with mine, I just mixed it all up.

2 cups crushed ice
1/2 cup strawberry daiquiri mix
3/4 cup pineapple juice
3 heaping Tbsp cream of coconut (Coco Lopez)

Add all ingredients to the blender and blend until smooth.

Yields two servings
