Mint Chocolate Oreo Ice Cream Squares

Every family has their essential dessert. The dessert that everyone asked for on their birthday. The dessert that Mom or Dad could make with their eyes closed. In our family, it was mint chocolate Oreo ice cream squares. What was yours?

We had this on the 4th of July. I thought it would be a good time to bring it back. And it turned out to be one bite of nostalgia after another. Pretty soon, we all found ourselves talking about old family stories. Like the time Haley dove down the laundry chute. Or when Caitlyn made Mallory eat grass. Most of the stories involved violence, but what family doesn't have a little sibling violence in their past?

1.5 qt mint chip ice cream
8 oz Cool Whip
1 package Oreos
Chocolate sauce, for serving

In a large bowl, set the ice cream container inside and let sit until melted. Pour ice cream out of the container. Fold in Cool Whip.

In the bowl of a food processor, add the Oreos and process until course crumbs form.

In a 9x13 inch pan, add 1/3 of the ice cream mixture. Spread evenly. Sprinkle on 1/3 of the Oreo crumbs. Repeat layers two more times. Put pan into the freezer and freeze until firm.

When serving, cut into squares and serve with chocolate sauce drizzled on top.

As soon as I'm done with this silly diet, I will be making this for sure!

Oh. No. Oreos are my secret weakness! They were on sale for $1.50 last week and *gasp* I ate the entire package....Now, I'll have to get some more and make this dessert...
