My daily lunch consists of a salad like this. Mixed greens and whatever else I find in the fridge. And then I top it off with some balsamic vinaigrette. Today's salad with mixed greens, half a roma tomato, a handful of blueberries, a few slices of red onion, Parmigiano Reggiano and balsamic vinaigrette.
So may I recommend you do what I do? Buy a box of mixed greens and just add whatever you have in the fridge or pantry. It's quick and so good for you.

Butterfinger Bites and Diet Doc at the movies. Is that bad?
Used the leftovers from Chili Chicken Tacos and topped salad greens with it. A little sour cream, some crushed tortilla chips (perhaps a few too many...). Delicious.
I had some horrible pasta/chicken combo at a Board Meeting. I'm not a fan of lunch meetings, especially Board (bored?) meetings.
I love your idea of mixed greens, by the way. Such a great way to get your nutrients.
I try to do the same thing for lunch. Today it was mixed greens, cucumbers, red peppers, garden tomatoes, spices, aged balsamic, and feta. I just throw in whatever I have on hand. It's so delish!
You have to try Brianna's Blush Wine Vinegar dressing on mixed greens with strawberries and almonds and feta. Yummy! But since you hate cheese, maybe not the feta.
I had a killer sandwich that my husband made. So good. I seriously never have time to make lunch these days. That salad looks amazing by the way. I need to get serious about all the fresh veggies I have in my fridge and make something delicious and healthy.
I did this when I first had J Luce and it was so satisfying but somewhere along the road I forgot about this trick and it resulted in a stop at arby's in between errands, ick!
Good plan! I'm on it. Too often I eat kid lunch and that is just no good!
I'm a creature of habit and from 2003 - 2008 pretty much ate bean burritos (frozen Cedar Lane from Costco) almost every workday. 2009-2010 are the years of the Salad. I typically put chickpeas, feta and diced up Morning Star "chicken" (nuggets, patties or strips) in the base of a tupperware bowl. Douse it with Newman's light balsamic. Add lettuce or spinach. And maybe corn if I have some around. (Hubby likes to add apples.) Pop on the lid and shake shake shake. Low carb. Very filling.
I spread some milk chocolate chips on the counter, dipped a spoon in peanut butter, flipped it upside-down and then smooshed it on the counter, picking up all those chocolate chips...don't judge me, I'm pregnant.
A big slab of homemade bread. I wish I'd had that beautiful salad to go with it!

I had peanut butter and honey on whole wheat. Cleaning out the pantry/fridge before vacation! But I DO love a good salad.
