Black Bean Avocado Salsa

These accompanied some steak quesadillas. But they would be great with chips too. I would even be in favor of adding some corn.



1 can (15 1/2 ounces) black beans, drained and rinsed
1/2 cup cilantro, roughly chopped
2 plum tomatoes, cut into 3/4-inch pieces
1 avocado, halved, pitted, peeled, and cut into 3/4-inch pieces
1 Tbsp fresh lime juice
Coarse salt and ground pepper

In a medium bowl, combine black beans, cilantro, tomatoes, avocado, and lime juice; stir to combine. Season with salt and pepper.

Made this last night, we decided to call it Guac-sauce-uh-mole. Love love it!
