Grilled Pancetta-Wrapped Asparagus

So dang good. Not much else to say about these babies. Good for a side dish or an appetizer. If you can't get pancetta, use bacon. It will produce a heartier flavor, but will still be so good.



1 lb asparagus
1 Tbsp olive oil
1/4 tsp ground black pepper
12-15 slices pancetta (about 1/4 lb)
3-4 wooden skewers, soaked in water for 30 minutes

Heat grill to medium-high.

Wash asparagus and trim off tough ends. In a shallow dish, combine olive oil and pepper and toss asparagus, coating well. Wrap one piece of pancetta around the middle of each piece of asparagus.

Thread 3-4 asparagus onto each skewer. Grill for about 6 minutes, flipping half way through.
